Tous nos produits dérivent de l’agriculture biologique, (culture et transformation sans usage de substances chimiques de synthèse) selon les normes de l’ U.E. et certifiés par CCPB un organisme de contrôle et certification reconnu par le ministère de l’Agriculture et des Forets.

Elevage porcin


Nos animaux sont élevés exclusivement par des produits végétaux d’origine certifiée en respectant leurs exigences spécifiques et élémentaires. Chaque phase de la production et de la transformation est contrôlée selon des précis standards de qualité. Nous obtenons ainsi des spécialités du goût typique de la tradition, absolument naturels.

Huile extra vierge d’olive


Des olives cueillies à main, extrait à froid pour maintenir et exalter son parfum naturel frais et fructueux.

Céréales et farines


Sur notre ferme on produit céréales et farines avec le méthode de agricolture biologique dès le 1989. Pendant toutes cettes années on ha selectionnée les éspèces et variétées qui resultent les plus douées à pousser dans nos sols et dans nos climat. En particulier maintenant nous nous sommes concentrés à épautre, orge, millet et avoine.

Grappa, Nocino et Vin aromatisé


Produit de marc de raisin fraiche distillé et puis avec une petite adjonction de miel d’acacia la notre est une Grappa tendre au parfums intenses. Il faut simplement la gouter! Le nocino est un liqueur tipique de la tradition de notre campagnes, obtenu par l’infusion froide des broux de noix et aromes à l’alcool à 96° et une petite adjonction de miel d’acacia. Le vin aromatisé: Obtenu par l’exploit des restes de la maceration du “nocino” dans le vin Chianti. Un bon digestif parfumé !

Charcuterie


Avec un sage travail nous produisons toute la gamme des charcuteries typiques de la Toscane : saucisson, finocchiona ( saucisson typique toscane fait de viande de porc, finement tirée, aromatisée avec du végétal de fenouil.) , saucisse, lard, paleron, jambon. Grâce aux longs temps d’affinage, nous obtenons des produits exquis et facilement digérables.

Le vin


Dans le teatre extraordinaire de la nature toscane, avec la collaboration précieuse de l’oenologiste Luano Bensi, nous produisons un vin d’une carature élevée. En épousant les traditions antiques avec les néssessitées productifs les plus récents on obtient un vin du charactère fort, capable de dégager les milliers de nuances d’un nectar, qui, dans le Chianti La Ginestra, recouvert les origines de vrai aliment, en se libérant des semblances réduissantes de simple boisson.
«Pane di un giorno, vino di un’anno » (« Pain d’un jour, vin d’une année ») c’est le chèr proverbe qui rapproche tous les gardiens de la tradition paysane du Chianti, et c’est par là que vient notre expérience, héritage du vin d’une fois, née justement pour satisfaire des besoins presque primaires. Vin fruité, savoureux, franc, simple mais jamais banal, sincère, ne trompe pas le palais et pas non plus l’estomac. A’ boire ensemble aux plats plus succulents de notre cuisine avec un clin de l’oeil au pure plaisire de boire. C’est une pièce d’histoire, toute à découvrir, copine fédèle de nos plats, témoine de notre pensée et de nos souvenirs les plus chèrs.

Flower of wood - Metcalfa Pruinosa honeydew, insect of american origins introducted in Italy at the end of eighties, it parasitized many spontaneus and cultivated plant secreting just honeydew, from which bees derived a very distinctive honey, color: dark, partial cristallization, flavor: less sweet a bit salty, dried prunes or cooked vegetables, fragrancy: vegetable jam of green tomatoes. obtained by processing the upper portion of pork neck and part of the shoulder, capocollo is an averagely fat and very aromatic sausage. The meat is salted and massaged (this is needed to facilitate both the penetration and uniform distribution of salt) then stuffed into a natural casing and seasoned for months. During the process is typical to add wild fennel and other common spices and herbs.

Bottled wine in a limited series called "domaine de' cocci rotti" (tr. land of broken shards). Only 355 bottles of this particular red, vinified with wisdom from the young Dario Nocci, a great lover of natural wine and always looking for a perfectly balanced wine with unique taste and no added sulfites. PRPOLIS EXTRACT
We obtain from a slow infusion of grinded propolis in alcohol 96° and spring water.
Propolis is harvested by the bees from plant buds and tree resins, they transform it and then used inside the hive to sanify cells or to cover other surfaces with a more or less thick layer depending on the necessity, to adjust the ventilation and reducing the esternal opening of it
Propolis is full of flavonoids from where it get its antiseptic and antibacterial properties. Our extract have a gradation of around 43° whereby is indicated to dilut in water for gargars or pure as a tincture of the oral cavity.

BREAD made with sourdough
This fully organic bread is made from a famous baker in Monteriggioni (SI) "L'Antico Pane a Legna", with our Iervicella flour type "2" or wholewheat. They use sourdough and a wooden oven to obtain a product like no other, as in ancient times.
