All of our products come from organic farming (cultivation and processing without the use of synthetic chemical substances), following the norms set by the European Union, and certified by the CCPB, an inspection agency recognized by the Ministry of Agriculture and Forestry.
Our animals are raised in an environment that respects their specific needs, and fed exclusively with vegetable products of certified origin. Every phase of production and processing is controlled in accordance with precise standards of quality. In this way we obtain a traditional, characteristic flavour, and meat that is absolutely safe and genuine.
Extra-virgin olive oil
Our olive grove has recently been planted with the typical varieties of Tuscan and in particular traditional Florentine olives: Frantoiano, Moraiolo and Leccino. These are all present in equal amounts to give those characteries that make our oil unmistakeable, for its fruity taste and for its just picked green olive smell. During 2007 we renounced to the Tuscan IGP denomination, because of a severe and uncontrollable (when following the organic agriculture method), attack of mosca olearia.
Grains and legumes
Since 1989 in our farm we produce cereals using the organic agriculture method, during the past years we have selected all that kinds and varieties that can better grow up in the climatic characteristics of our area, so we decided to produce spelt, barley, millet and oat.
Grappa, Nocino and Walnut wine
Our fresh marcs are distilled immediately, so we get a grappa with an intense smell and a soft flavour. The softness deriving from the sugar content comes from our acacia honey. The results must be tasted to be believed. Perfect as ending-meal liquor. Following the old customs of the Tuscan farmers who always tried to derive as many benefits as possible from the resources of the land, we produce this fragranced walnut wine, which is the union between the exploitation of residual aromas and the alcohol contained in the hulls after the production of Nocino. These give the taste and the aroma of walnut to our red wine and a lso increase the alcoholic strength to 16°. The addition of selected honies completes the taste, defining the properties of a perfect dessert wine. Nocino is a typical liquor of the Chianti coutryside tradition, we get it with a cold infusion between 96° alcohol and the hulls of fresh walnuts picked on S.Giovanni day (24 June) with the addition of aromas.
We use a skilful, slow curing process to create an entire assortment of traditional Tuscan cold cuts: salame (salami), finocchiona (fennel seed bologna), salsiccia (sausage), capocollo (cured pork neck), spalla (cured pork shoulder), pancetta and prosciutto. During the long aging times of traditional curing, we obtain a delicious, easily digestible product.
In the awesome thetre of the toscan nature, with the precious collaboration of our enologist Luano Bensi, we produce a high carated wine.
Coupling the ancient tradictions with the recent production necessities, we obtain a wine with a strong character, that is able to emit all the thousand shades of a nectar, that in the Chianti Colli fiorentini La Ginestra 2006, ridiscover the ancient origins of real food, releasing from the reductive aspect of simple drink. Pan di un giorno, vin di un anno (that means Bread of a day, and wine of one year) this is the proverb that unite all the costodian of the Chianti farmer tradiction, and it's from there that our experience come out, heritage of an aold wine, born to satisfact the primary needs. Fruited wine, witty, true, simple but never banal, sincere, it never fails the palate and also not the stomach. Indiceted to drink it with the most succulent dishes of our recipes, but when you drink it you can feel the real pleasure of drinking. It's a piece of history, just here to be discovered, trusted fellow of our dishes, witness of our thinking and of our dearest memories.
